Caribbean Sea Moss & Pumpkin Soup

  • Blender or stick blender

Ingredients
  

  • 2 tbsp sea moss gel
  • 400 g pumpkin or butternut squash, peeled and diced
  • 1 medium onion, chopped
  • 2 garlic cloves, crushed
  • 2 spring onions, chopped
  • 1 teaspoon teaspoon dried thyme
  • 1/2 teaspoon ground allspice
  • 750 ml vegetable stock
  • Black pepper

Instructions
 

  • Gently sauté onion, garlic, thyme, and spring onion until softened.
  • Add pumpkin and stock; simmer for 20–25 minutes until tender.
  • Blend until smooth.
  • Stir in sea moss gel and warm gently for 2–3 minutes. (do not boil).
  • Season with black pepper to your taste and serve.

Notes

  • Sea moss is added after blending to preserve texture.
  • Suitable alongside grilled fish or jerk chicken.
